Vegan Choco Coco Banano Muffins

It was raining so I made some muffs!
My original intention for this recipe was for it to be a bread. But when I started looking for my bread pan I spotted my muffin pan. Impulse took over and viola we have a muffin recipe.
I guess you could call these muffins "healthy" if you're desperate to, but honestly if you want to be "healthy" eat a salad. These little babies were made to be enjoyed :)
INGREDIENTS:
- 1 cup White Flour
-1 cup Wheat Flour
- 1/2 cup Quick Rolled Oats
- 1 tbsp Vanilla
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 3 V Ripe Bananas
- 1/2 cup Choco Chips
-1/4 cup walnuts (optional)
-1 tbsp Flax Seeds
-1 tbs Chia Seeds
- 1/2 cup Almond Milk
-1/4 cup maple syrup
- 4 pieces (1/4 cup) Cacao Butter
- 1 tbsp cinnamon
- A few shakes salt
-Unsweetened Coco Shreds for topping
METHOD:
- Preheat oven to 350.
-Melt cacao butter.
- Combine flax with 2 tbsp warm water in a small bowl and set it to the side.
- Mash the 3 bananas well.
- Combine Almond Milk and Vinegar with bananas and set aside.
- Whisk together with a fork: flours, oats, baking powder, baking soda, cinnamon and salt.
-Add flax to wet ingredients and add chia seeds, vanilla and melted cacao butter.
- Add dry ingredients to wet ingredients and stir together.
- Add chocolate chips and walnuts.
-Bake at 350 for 10 - 14 minutes.
