Vegan Banana Bread

Ingredients:

2 super ripe bananas

1 pretty ripe banana (for topping)

1/2 cup brown sugar

2 cups white flour

1/2 cup oatmeal flour

1 teaspoon cinnamon

1 teaspoon baking soda

1 tablespoon vanilla extract

1/4 cup walnuts

2 flax eggs

1/3 cup veggie oil

Method:

1. Pre heat oven to 350 degrees fahrenheit.

2. Make flax eggs by adding 2 tablespoons of ground flax to 3 tablespoons of warm water. Set aside for 15 minutes. SIDE NOTE: If your flax eggs are runny don't worry about it, mine never turn into jelly.

3. Mash the 2 super ripe bananas in a bowl.

4. Add brown sugar, vanilla, brown sugar and oil. Stir with fork until combined.

5. Add white flour, oatmeal flour salt, cinnamon and baking soda to mixture. Stir with fork until combined.

6. Grease a bread pan and pour banana bread batter into pan.

7. Slice the "pretty ripe" banana into long horizontal slices and lay on top of bread.

8. Bake bread for approximatley 30 minutes.
